Scalding is the next step in processing. This step is used to loosen the feather follicle allowing the feathers to come out easier. Scalding can be done at different temperatures depending on the desired finished product. We have a number of scalder options from table top scalder’s to semi-automated models that will do 20 or more birds at a time. Once again first determine how many birds your production line can do per hour and divide that by about 1 minute 30 seconds. That is the average time for a bird to scald.
